This Grade 1 quality natural Yirgacheffe coffee is from the Gedeb District, located within the Gedeo zone. This Gedeb site has roughly 700 local farmers who bring their coffee here for drying, processing and hand-sorting. The farms are little more than large ‘gardens’ adjacent to homes, growing heirloom varietals native to the region. Gedeb boasts incredible floral tones in cup and aroma, pointed sweetness, and crisp fruited hints in a cooling cup. It provides the body and balance to our Farmhouse espresso but when roasted just a bit lighter it shines all on its own as a complex and elegant coffee.

This SHB EP coffee was cultivated near Lake Atitlan in Guatemala’s highlands. The lake is shaped by deep escarpments which surround it and by three volcanoes on its southern flank. This lot came from Cerro Lancandon Chochajau, a farm operation that cultivates over 33 hectares with 27 producers contributing to the farm.

Kenyon Mountain Farm

The Kayon Mountain Coffee Farm is owned by multiple families that have been born and raised around the experience of coffee. These shareholding members had mainly been supplying coffee to auction for the past 30 years until they started their farm in 2012. This farm boasts a 500 hecatare spread, of which half is planted in heirloom Typica coffee and the other land reserved for cabbage, and indigenous shade trees. By 2015, they had implemented washing stations and dry-hullers allowing them to start exporting their own coffees and now see an annual production of about 300 tons. The coffees see an average fermentation time of 24–36 hours, followed by an average drying time of 12–20 days. As for the future, Kayon Mountain plans to plant more coffee, improve the quality of their processing, and even begin leasing more land to expand their practice.

Konga – Ethiopia

This coffee comes from a washing-station in Konga, which is in the kebele or village, of Sede, in the Yirgacheffe district. Konga is about 4 kilometers south of the town of Yirgacheffe. We like the Konga microregion of Yirgacheffe for both its strong citrus and supportive stone-fruit flavors of peach and apricot, and when this is combined with processing as a natural, the result is dried cherry, cranberry, and lemonade-like acidity.

FARMHOUSE ESPRESSO

Farmhouse Espresso is our seasonal espresso blend that changes from time to time as coffees go in and out. Currently it features Gedeb, a grade 1 natural from Ethiopia and Chachajua, an SHB EP grown near Lake Atitlan in Guatemala’s highlands. It’s a blend that has plenty of fruity top end to provide a tasty and complex espresso for drinking straight as well as the nice anchored chocolate and toffee notes that let it play well with milk. The Gedeb’s fruitiness makes for berries and cream in a cappuccino. Farmhouses are warm, comforting, familiar, yet challenging. They are homes for hard working people who appreciate the goodness of craftsmanship. It is in that spirit that we offer our Farmhouse blend- a versatile, comforting, and rewarding blend of top coffees to suit every need.

WEATHERVANE BLEND

Our house dark roast, Weathervane is a good indicator for a quality coffee that’s been roasted more darkly than our other offerings. Weathervane is treated with the same attention to detail as all of our other coffees, and for the discerning coffee drinker who prefers things a bit smokier, the proof is in the cup. Weathervane takes cream and sugar like a champ, and makes a phenomenal accompaniment to a dessert course. The current components in the blend are the same as Farmhouse, 50% Chochajua – 50% Gedeb. You can always look to Weathervane to point you in the right direction.

RAVEN

This is our darkest roast. We select from our in-season fuller bodied coffees that handle roast well to create this blend. We roast it just into second crack, which is the classic “dark” marker, as a transitionary coffee for guests who are accustomed to drinking dark roasts.
